Celiac Disease: Disease Models in Understanding Pathogenesis and Search for Therapy

Celiac disease is a complex polygenic systemic disorder caused by dietary gluten exposure that selectively occurs in genetically susceptible people. The potential celiac defined the presence of disease-specific antibodies and compatible human leukocyte antigen but without histological abnormalities duodenal biopsies. At present, only treatment lifelong adherence to gluten-free diet. Despite its effectiveness, diet difficult maintain due cost, availability foods, hidden gluten. need develop non-dietary methods widely recognized, this prevented absence pathophysiologically relevant preclinical model. Nonetheless, vitro vivo models have made it possible investigate mechanisms new approaches: use foods with neutralized gluten, microbiota correction, cocktails specific endoproteinase, polymer binders, inhibitors transglutaminases inflammatory cytokines, vaccine based on allergen-specific therapy.
